First you need to know something, Goto Settings>General>About, and look at the model, does it start with MC or MB?

If it is MC you cannot jailbreak, i forgot why, but thats just it...

i just jailbroke my touch, however it's an 8gb 2g so i can't exactly walk you through the process since we have different generations and it might not be the same. but i used the spirit jailbreak, i recommend you find out what softwear yours is running on, mine was on 3.1.3. i also recommend you know if it's an MC model. (mine was). the newest itunes is i think 9.2 and as far as i know the jailbreak i used will only work with itunes 9.1 or lower. (you can download a lower version of itunes if you search it on google, there should be websites where you can download it.)
now onto the stuff you can do. when you jailbreak, you get an app called cydia. it's basically like the app store or itunes for a jailbroken ipod. that's where you get all your apps, themes, tweaks, etc. installous is supposed to be what you use for free apps, but when i tried it it didn't work, so i am now using appcake. i'm not sure if it has all paid apps, but it has a lot. (if you need help with any of this let me know)
when you turn off your ipod your theme and games should still be there. i'm not quite sure, but i think if you sync your ipod with your computer it deletes all your cracked (free jailbroken) apps. you can always cancel the sync when you plug your ipod in, or download something from cydia that is supposed to help called appsync.
